Why do I always see the G major with only 3 fingers? Whats the difference?

The difference is that in the 3 finger version of the chord you are playing a B note on the 2nd string instead of a D note, like in the 4 finger version of the chord I teach. To put it in perspective, the G major chord is made up of 3 notes, which are G, B and D. Because of this, as long as you’re playing these 3 notes at the same time, you are playing G major, so there are many ways you can play the G major chord
